| Raw Carrot Cake Bites |
I found the recipe from the Queen of Quinoa's website (http://www.queenofquinoa.me). I was just browsing around and I ran across this recipe. It had few ingredients and it was simple to make...so I went for it. I had all of the ingredients on hand already, so why not? Well, I sorta had all of the ingredients. Her recipe calls for 5 Medjool dates, of which I did not have, but I had Barhi Dates so I rolled with them. Good decision! I'll have to post about dates at another time. For now, I'll just say Barhi dates are my favorite dates so far and they taste like caramel candy when they are cold. Yum!
So here's the recipe that i used.
Ingredients:
- 4 small Carrots (her recipe calls for 2 medium size carrots, but I had organic carrots and they seemed really small so I used 4 of them)
- 1/2 cup of Walnuts
- 1/2 cup of Pecans
- 10 Barhi Dates (her recipe called for 5 Medjools, but since I didn't have them I used Barhi)
- 1 TBS Ground Cinnamon
- 1/2 tsp Ground Ginger
- 1/2 tsp Ground Nutmeg
- Unsweetened Shredded Coconut
Instructions:
- Shred the carrots in a food processor using the S Blade.
- Remove carrots from food process and set aside.
- Put walnuts and pecans in food processor. Process until they form a meal.
- Add back the carrots, plus add the ginger, nutmeg and cinnamon.
- Process until a dough is formed.
- Form dough into balls. I used a cookie scoop to do this. It made it easy-peasy.
- Roll the dough balls into the shredded coconut.
- Place in refrigerator for at least an hour to set.
I was able to make 10 of the mini bites and 14 of the regular bites. That's it! Enjoy your carrot cake bites!
